Strawberries & Champagne Jello

This makes an attractive dessert for a Valentine's themed dinner party.
Serve it in individual champagne flutes for best effect.
This makes about 6 servings, depending on cup size.

You will need:
1 cup ginger ale (for some sweetness)
3 cups COLD Champagne/sparkling wine (nothing expensive, of course; or use sparkling white grape juice)
3 envelopes of knox gelatin 
4 - 5 strawberries


I also used:
2 spouted measuring cups, 1 cup and 4 cups capacity
a paring knife
drinking straw if needed


Put 1 cup ginger ale in the small measuring cup and boil in the microwave. (You can also just boil in a pot.)

Dissolve the gelatin in the boiling ginger ale and cool for about 15 minutes.

While that is cooling:

Use a paring knife to cut into the strawberry top from side to center in a "V" shape, then slice.

Measure 3 cups of champagne into the other measuring cup.

Slowly add the cooled gelatin mixture to the champagne.

Stir.

Pour into serving flutes/bowl/whatever you choose.

Place in refrigerator and check it after about 20 minutes and continue to check until it is softly set.

When it begins to set, add the strawberry hearts carefully with a knife or straw and arrange them how you like.

Place back in refrigerator until serving.

***Correction Feb. 13: should be 3 packs of gelatin, not 4. SORRY!
